Immobilization of lactic acid bacteria in alginate : spectrophotometric measurements of intracapsular cell population and control of cell release by chitosan coating

Cell release from the beads during milk fermentation was studied. Coating the beads with low viscosity chitosan reduced cell release from 10$ sp5$ CFU/ml to 10$ sp3$ CFU/ml after 6 hours fermentation with initial intracapsular cell population of 10$ sp8$ CFU/ml medium. Control of cell release with chiltosan coated alginate beads was demonstrated for 3 consecutive fermentations. The effect of adding CaCO$ sb3$ to the cell-alginate mixture during immobilization on cell release was also investigated.
