Publisher Summary This chapter discusses the stabilizing ability of surfactants in emulsification and foam formation. The chapter explains only those properties that reflect the influence of the surfactants on the thinning kinetics, formation and rupture of equilibrium films, and that are directly employed in the studies of phase inversion in emulsions, for the conceptualisation of the hydrophile-lipophile balance (HLB) number system (factors that determine the energetic barrier for stabilisation of both types of the emulsions), or for the determination and explanation of other characteristics of the hydrophile-lipophile balance.
