Abstract

Graphical abstract This study addresses the influence of GAGs and crosslinking agent, genipin on the dielectric properties of gelatine. The dielectric behavior of different composite systems at different concentrations of GAGs suggests the formation of potential induced and water structure-enforced ion-pair formation at or near protein structure. The crosslinker and GAGs stabilize the dielectric permittivity. Highlights ► Influence of GAGs and genipin on dielectric behavior of the gelatine is studied. ► GAGs and genipin influence the electrical field on the chain dynamics of gelatine. ► Steep increase of impedance indicates that GAGs and gelatine are interconnected.
