Publisher Summary This chapter focuses on the materials used in food and water microbiology laboratories, their specification, and testing. There are numerous small items and materials used in food and water microbiology laboratories, such as sample containers, glassware, culture media, Petri dishes, chemicals, pipettes, membrane filters, de-ionized/distilled water, and reference cultures. Specifications of these materials are important and a lack of control on them may lead to erroneous results, which may not be apparent. This chapter discusses these small items of equipment and materials, the possible effects that lack of quality control may produce, and suggests the measures that need to be included in a quality assurance program for these materials, such as sterility testing, quality control, and sterilization.
