Abstract

Abstract A high-performance liquid chromatographic method has been developed to analyse the compound E-2-nonenal in beer at the ultra trace level. E-2-Nonenal is isolated from beer by solid-phase extraction and derivatized with dansylhydrazine. The derivative is selectively determined by a combination of on-line preconcentration and heart cutting followed by fluorescence detection. The application of boxcar chromatography enables routine analysis of E-2-nonenal with sample injection about every 30 min.
