Abstract

Abstract We provide an overview of the most recent advances in the field of surfactant and polymer-stabilized emulsions. The article is focused on inter-droplet forces, monolayer adhesion, aggregation of emulsion droplets, emulsion gels and finally destruction through coalescence and Ostwald ripening.
