The main aim of the thesis was to provide an overall view of the production of quality organic food and find out about the role of organic agriculture in society. The theoretical part contains an introduction to the topic and additional chapters are devoted to general characteristics of organic farming, organic food production and the current situation of organic farming in the Czech Republic, which is reflectedin the life of a marginal group of landlords. The empirical part of the original scientific work that uses qualitative research was used to find out how the real environment in the process of meat production organic beef on selected organic farms in the foothills. Tle final part is devoted to the evaluation of research results and recommendations to increase the effectiveness of the work of farmers (business efficiency) and researcher the ability to leverage its own research findings.
